ARNADÍ

Boil the pumpkin and leave to drain for a day until completely dry, then mix the flesh with the sugar (the same weight as the pumpkin), cinnamon and lemon zest. Spread in an earthenware casserole, decorate with almonds and pine-nutsand bake in the oven at a very low heat for around 2 hours.
