PUMKPIN’S (BUÑUELOS)

Ingredients
Pumpkin
Pressed yeast
Flour
Grated lemon zest
Sugar
Ground cinnamon

Preparation
Cook the pumpkin and allow
to cool. Remove the skin and
seeds and mash the flesh,
adding the flour, lemon zest,
yeast and cinnamon. Leave
the bowl somewhere warm
to encourage fermentation.
When the mixture has risen
sufficiently, work into balls
and drop into plenty of hot oil
at around 170º C. Drain and
sprinkle with sugar.
